A leading light in the culinary arts world since opening in 1977, California Culinary Academy has an esteemed reputation of providing its students with specialized “classic and contemporary” cooking techniques they need to work in today’s high stakes restaurant and food management world. The school has recently partnered with Le Cordon Bleu, “the world-renowned culinary and hospitality program,” to strengthen and round out the education offered to their students. Le Cordon Bleu Culinary Arts Program
This highly popular program allows students to receive their Associate of Occupational Studies degree in 60 weeks. “Classical and modern culinary techniques” are blended together with instruction in kitchen management skills, preparing students to work in resorts, private clubs, hotels, restaurants and even at gourmet food magazines. Instruction offered includes appetizer preparation, entrees, soups, sauces, vegetables, pastries, bread, table service styles, kitchen sanitation and hygiene, cost control, human resources management and the history, evolution and diversity of the culinary arts.
California Culinary Academy: Baking and Pastry Arts Program
The Academy’s 30-week Baking and Pastry Arts Program offers hands on specialty skills training preparing students for jobs in restaurants, hotels, bakeries and pastry shops, Students will learn about straight and sponge dough methods, specialty yeast dough items, fillings, puffy pastry, quick breads, syrups, candies, icings, creams, pies, cakes and the production of pastries. Other areas covered include human resources management, nutrition and sanitation.
California Culinary Academy: Le Cordon Bleu Hospitality and Restaurant Management Program
This 45-week course offers an Associate of Occupational Studies degree in a rigorous yet fun fast-moving program that will equip graduates to work in some of the world’s finest restaurants and hotels. Basic culinary arts skills and strong management practices are emphasized in the course, with education in wine studies, accounting, beverage service, human resources, and gaming/casino management. The program includes a nine-week externship providing invaluable field experience preparing students for what’s to come upon graduation and job search.
